The owner, Koji Onuma, initially worked for a general company in his hometown of Yamagata, but decided he wanted to run his own business. He honed his cooking skills, which he had loved since childhood, and decided to pursue a career in Japanese cuisine. After studying at a culinary school, he trained at various renowned restaurants before opening his own restaurant in February 2020.

Opening during the COVID-19 pandemic meant there were many difficulties at first, but by focusing on ingredients every day and continuously pursuing "dishes that can only be eaten at our restaurant," the restaurant's recognition grew. Now, it welcomes many customers from overseas. Sometimes, dishes made with vegetables grown by the owner's parents in Yamagata Prefecture, his hometown, whom he describes as "the most trustworthy producers," are on the menu. It truly is a wonderful originality that can only be found at our restaurant.
