Soak the burdock in water, wash it lightly and carefully remove any dirt, then cut it into pieces with the skin still on. Stir-fry in sesame oil in an iron pot, add sake, Hondashi, and Ajinomoto, add water, add a small amount of soy sauce, expose it to air once during the stir-frying process to mix in the scum, and leave it in the pot overnight.
1. Soak the burdock in water, wash it lightly, carefully remove any dirt, and cut it appropriately with the skin still on. Wash the burdock lightly just enough to remove any dirt, and do not soak it in water after cutting.
2. Stir-fry in sesame oil in an iron pot. Be sure to use an iron pot, as the scum will be reduced in the iron pot and will stick to the parts exposed to the air, turning them black. It will not color well in a Teflon-coated pot.
3. Add the sake, Hondashi, Ajinomoto, water, a small amount of soy sauce and stir fry.
4. If you finish it all at once, it will be done before it has completely turned black, so turn off the heat while there is still water in it, stir it a little to expose it to air, let the scum mix and turn black, and then turn the heat back on to finish it.
5. Leave it in the pot overnight.
