This dish was inspired during a time of poor health, when I thought of eating broken soba noodles as a simple way to take food with medication. I boiled the noodles and ate them in the hot water they were cooked in. Surprisingly, I felt that this brought out the sweetness and umami of the soba more than any other preparation. This experience made me consider offering it as a menu item.
Ingredients:
Soba flour: 90 cc
Myoga (Japanese ginger): 2 pieces
Rock salt: a dash
Yuzu: a dash
Wasabi: a dash
Nanko ume (pickled plum): 1 piece
Dried seaweed: a dash
Spring onion: a dash
Soba dipping sauce: a dash
