When I received a request from Asami-san, I wanted to try to create something simple yet delicious that would bring out the best in the ingredients.

After taking out the red seaperch, you need to quickly scald it for about five seconds. After that, you need to remove the slime, but it is important to do this step properly.

Inside the restaurant, the counter made from a single cypress board is eye-catching. You can watch the owner, Mr. Sasada, skillfully prepare the dishes right before your eyes. There are also semi-private table seats separated by shoji screens.
