The Minato Mirai district of Yokohama is home to many high-rise apartment buildings. Get off at Minato Mirai Station, go up to ground level, and head towards Pacifico Yokohama. As you walk along the hall to your right, you will see The Kahala Hotel & Resort Yokohama, which attracts dignitaries and celebrities from around the world. When you go up to the third floor, you will find Japanese cuisine Hama floating in a vast water garden. Chef Nobuhiro Aoki has previously trained at Japanese restaurants and hotels in the Tokyo metropolitan area, and will take on the role of head chef at Japanese cuisine Hama when the resort opens in 2021.

  2. I am conscious of the SDGs every day, so I try to use up as much as possible without producing waste, and in this menu, I made the turtle meat used to make the soup into tsukudani. I think Japanese cuisine is about cutting out unnecessary things as much as possible and enjoying the original flavor of the ingredients, so I put a lot of effort into the preparation and other things that customers can't see, to make the food even more delicious.
