The boar meat hoba-yaki allows you to taste the classic white meat of boar loin, which is full of fat. Delicious boar loin is usually cooked in a hot pot, but this time it is hoba-yaki. The boar meat is thoroughly cooked, but care is taken not to make it tough. The autumn ingredients are arranged on the hoba leaf in a "fukiyose mori" style to give a sense of the season. The delicious boar loin is enjoyed with hoba miso.

    For maple leaf carrot stew, shape the carrots into the shape of maple leaves and boil briefly. Simmer with syrup, salt and butter and finish by adding lemon juice. For fried ginkgo nuts, peel the ginkgo nuts and deep fry them. Sprinkle with salt. For grilled matsutake mushrooms, cut the matsutake mushrooms to bite size pieces. Sprinkle with sake and salt and grill in a baking pan. For shirred leeks, turn the white onions into shirred leeks. Cut the green onions to bite size pieces. Soak the magnolia leaves in hot water and brush with light sesame oil.
