The boar meat hoba-yaki allows you to taste the classic white meat of boar loin, which is full of fat. Delicious boar loin is usually cooked in a hot pot, but this time it is hoba-yaki. The boar meat is thoroughly cooked, but care is taken not to make it tough. The autumn ingredients are arranged on the hoba leaf in a "fukiyose mori" style to give a sense of the season. The delicious boar loin is enjoyed with hoba miso.
In November, we start serving wild boar hotpot, but wild boars store up fat before winter and the season lasts until March of the following year. This time, we combined it with some remaining autumn ingredients.
