My mother's family ran a fugu restaurant, so I joined Nadaman at the age of 18 with the intention of eventually taking over the family business. We opened a store in Arakicho in the winter 12 years ago. I have endless dreams of having a tatami room or private rooms, but I want to work with the customers in mind first.
Specialty dishes
The sourness of the tomatoes is neutralized with soy milk, and the soft texture is achieved with tapioca flour.
