Owner Tomoya Takayama has loved cooking since he was a child, and after graduating from culinary school, he embarked on a culinary career in his hometown of Yokohama. After honing his skills at Japanese cuisine restaurants such as Taigetsu, he opened Chiso Takayama in Shirokane Takanawa in July 2024.
If the broth isn't properly prepared, even good ingredients will go to waste, so I'm particular about that. I want to provide the food in the best way I can now, and hopefully one day people will understand what I want to do.
